Pumpkin soup with Herbaria´s Cheeky Pumpkin
- Preheat the oven to 350 F / 180 C
- Bake 1 lb. of pumpkin pieces for 30 minutes
- Heat 1 tbsp. olive oil
- Add ½ chopped onion + 1 garlic clove and steam
- Add baked pumpkin and simmer for 5 minutes
- Add 1 lt. vegetable broth and 1 cup coconut milk
- Simmer for 15 minutes
- Mix until well blended
- Add salt and pepper
- Season with 1 tbsp. of Cheeky Pumpkin
Tip: Garnish with yogurt or cream fraiche and chopped chives.
